Many people from all around the world have grown to love Texas Twinkies. They are made from leftover briskets that are usually disposed of when a BBQ party is over.
For those of us who are addicted to smoked briskets, Texas Twinkies is such a delicacy. In case you have never had them before, you will wish you knew about them earlier.
Over the years, different chefs have come up with various ways of preparing the delicacy. When prepared correctly, Texas Twinkies can be pretty much mouth-watering. However, if you do not get it right, you will end up with the most disgusting food ever.
To avoid that, we will show you how to an easy-to-follow process, of correctly cooking Texas Twinkies.
First, What is a Texas Twinkie Exactly?
For those who have never heard of it, it may sound entirely made up. It is indeed a thing, though, and when you are done preparing it by following our recipe, you will love it. A Texas Twinkie combines every great thing about barbecues. They are smooth, cheesy, smokey, spicy, and sweet. They are also prepared using bacon!
The finest Texas Twinkies are prepared by first smoking the briskets and leaving them to stay overnight in the fridge.
What Will You Need To Prepare It?
You do not need much to prepare Texas Twinkies. This is because the whole process is as simple as 1, 2, 3.
You will only require:
- Smoked leftover briskets
- Nitrile hand gloves
- Wood chips such as hickory
- A smoker box for indirect cooking
How to Make Texas Twinkie
There are two different ways in which you can make your Twinkies, and we will cover both. A good thing is that you start the same way, for both procedures.
1. Prepare Your Jalapenos
- First, you will have to split your jalapeños along their lengths.
- Put on your gloves and remove the seeds from every jalapeño piece you want to cook. To pop them right out, run your thumb underneath the seeds. Do not forget to do this process with your gloves on. You can also use a spoon for this procedure.
- Place the seedless jalapeños aside for the filling process.
Tip: Avoid touching yourself with the gloves on. Jalapeño peppers are pretty hot, and you may regret it if your skin or eyes come in contact with jalapeño juice.
2. Choose the Perfect Bacon
One bacon piece is never enough. To fully cover a portion of a Twinkie, you will need at least 1 ½ or two slices of bacon. If you are preparing Twinkies for several people, you can multiply their number with that of a portion to get how much bacon would be enough.
It would be best if you trimmed your bacon as the two pieces will glue up when roasting. Both the super thick and thin bacon work nicely when cooked correctly. Thick bacon renders down to become crispy, just like the regular ones.
3. Make Your Own Filling
Slice your leftover brisket against the grain to come up with big enough slices that can fit inside your jalapeños. If there is any brisket still remaining, you can chop it into tiny pieces and mix them up into the cheese cream that you will stuff inside the jalapeños.
Fry your chopped-up bacon until crispy, drain the fat, then set the bacon aside.
It is now time to do the filling. Place your cream cheese and other ingredients such as mozzarella, grated cheddar, chopped-up brisket, and bacon inside a bowl and mix them up. You may also want to add your barbeque rub in this step.
4. Fill the Jalapeños
As mentioned earlier, we are going to cover the two ways in which you can make your Twinkies and these are guided by how you will do your filling. From the above steps, your filling is ready and the jalapeño seeds out of the way, so you can now begin filling your peppers.
Everyone has their own taste. You can either fill each jalapeño half with the mix of cream cheese, wrap them up with two bacon slices, or you can do the same, then sandwich a brisket slice between jalapeño halves and wrap with two bacon slices.
Hold every assembled Twinkie with a toothpick or two, to hold everything together.
5. Smoke Your Twinkies
When you are done assembling your Twinkies, place them into a fridge as you light up your barbeque grill. On your smoker box, you can add hickory wood chips to produce the required smokey flavor. Set up the temperature of your grill to between 350 °F and 375 °F for indirect heating.
As soon as your smoker box reaches the desired temperature, you can begin placing your Twinkies on the grill for indirect cooking. Let them cook for about 45minutes then brush them with a barbeque sauce, and allow an extra 15minutes, to set the glaze.
Voila! You have your perfect Texas Twinkies. All you need to do now is serve them to your guests with wedges, fries, or any other accompaniments of your choosing.
Our Favorite Texas Twinkies Recipe
- Jalapeño peppers
- 8 ounces cream cheese
- 1 ½ teaspoon salt
- Grated mozzarella and cheddar/mozzarella
- 1lbs chopped leftover brisket
- Chopped up bacon
- Barbeque sauce
- Barbeque rub
- Smoke and refrigerate your leftover brisket
- Cut the jalapeño peppers lengthwise
- Get rid of seed using gloves or a spoon
- Chop up and fry the bacon until crispy
- Mix up the grated cheddar, barbeques sauce, chopped up brisket, bacon, cream cheese, and mozzarella in a bowl
- Fill the jalapeño halves, wrap up with a strip of crispy bacon and hold together using a toothpick or two
- Smoke the Twinkies at 375°F for 45mins.
- Glaze the Twinkies with a barbeque rub and smoke at the same temperature for another 15mins
- Serve with wedges or fries as extras
