How much juice is in one lemon
Numerous recipes call for lemon juice, but I sometimes add it even when it is not required.
However, it is quite puzzling to determine how much juice is in one lemon. It is easy to read the recipe that requires the juice or the zest of one lemon – but not all lemons are the same.
I have witnessed the lemons a size of a rather small egg and lemons a size of an average orange and I bet that their juice content differs greatly.
So how can you be sure how much juice is in one lemon?
I have decided to find some information on an average weight of lemons. Some smart people have calculated that an average lemon weighs about 3.6 ounces. I have decided to find such a medium sized lemon and run a test of my own.
When I had gotten a hold of a perfect test sample (I had to go through a full bag of lemons for an ideal fit), I squeezed all the lemon juice I possibly could out of it.
The results are as follows:
An average-sized lemon has around two tablespoons of juice and one tablespoon of lemon zest in it. As there are usually four to five lemons in one pound, you can do the simple math and calculate that there are 8-10 tablespoons of lemon juice in one pound of lemons.
In this way, if you do not have lemons but bottled lemon juice instead, you now know how to act if the recipe requires juice from one lemon – simply add two tablespoons of the lemon juice you have. If the situation is reversed, and your recipe calls for one tablespoon of lemon juice – you can take a medium-sized lemon and squeeze the fresh juice out of one half.
I always prefer fresh ingredients, but when it comes to lemons, it is even more important to try and use fresh juice rather than the bottled one. Fresh lemon juice is more complex, and richer in vitamins, and will thus be more beneficial for you as well. In short, use fresh lemon juice whenever you can!

- Cut your lemon in half crosswise. Stab a fork into the center of the lemon and press it up and down until all the juice is extracted.
4. Use a spoon
- Once again cut the lemon in half crosswise. Now, stick a spoon in the center. Make twisting motions with a spoon and then squeeze the rest of the juice out.
5. Use a citrus press
- As you can already assume, first you need to cut the lemon in half crosswise. Next, use a citrus press as instructed.
Extra Tip: To get all the juice out, put the lemon in the microwave to warm it up prior to juicing it.

I have read somewhere that a famous writer Laurie Colwin loved lemons as well. She wrote that if she could have only one fruit in the kitchen, her choice would always be lemons.
